Soy protein concentrates are created by extracting the soluble carbohydrate fraction and some flavour components from a defatted meal. Solids primarily composed of proteins and insoluble carbohydrates are dispersed in water, neutralized to pH 7.0 if necessary, and spray-dried to produce soy protein concentrate. The aqueous alcohol extraction or acid leaching process is used to produce the majority of commercial soy concentrates.
